The "pink" survey that was sent out to all employees requesting input on regarding health and dental insurance results are as follows: Out of 16 responses: The majority are attending preferred providers with Blue Cross. Dr. Netter was asked to participate as a Blue Cross Blue Shield provider but he declined their offer. Those who do not attend a doctor who is on the providers list are paying 30% of the bill plus the difference from the allowable amount. Example: Non -provider doctor's bill is $100.00, Blue Cross allows $60.00 and $40.00 is not allowed. Fresh shrimp 1/3 cup butter 4 cups milk 1/3 cup flour 2 slices onion 3/4 tsp. Salt 1 bay leaf 1/8 tsp. Pepper 1 cup celery, diced 3 tbs. Chopped parsley Wash shrimp thoroughly in cold running water; put into rapidly boiling salted water; cover; boil 15 minutes (no more, no less); drain. When cool enough to handle, remove from shells; take out black vain which runs down center back. Save 6 whole shrimp; chop balance into tiny pieces. Pour milk into saucepan; add bay leaf, onion slices, celery, and parsley; scald milk about 2 minutes; do not boil. Melt butter in deep saucepan over low flame; stir in flour, salt, pepper. When very smooth, gradually add scalded milk, stirring constantly until mixture boils; add chopped shrimp; cook 5 more minutes, stirring constantly. Garnish with a whole shrimp floating in each bowl on top of bisque. NOTE: I substitute Half & Half for milk. Yes, it really does mean "boil shrimp for 15 minutes." I leave out the parsley.
