Holiday Yams with Marshmallows: 2 Red Delicious apples, sliced 1/3 cup chopped pecans 1/3 cup brown sugar '/i tsp. Cinnamon 128 -ounce can yams, drained 1 cup miniature marshmallows Toss apples and nuts with combined brown sugar and cinnamon. Alternate layers of apple mixture and yams in a 1 '/z quart ovenproof casserole. Cover and bake at 3500 for 35 to 40 minutes. Sprinkle with marshmallows; broil 6 to 8 minutes, or until lightly browned Serves 8. 'Small Eyes How many time have you been told that your eyes are bigger than your stomach? Clearly, when we're hungry we tend to pile on the food as we visualize the complete satisfaction of our hunger. There are double -sized servings. Second and third helpings. Extra items that we might not even really want. When food's attractively prepared, it all looks good and it all smells good. We want to have lots of everything ...and we fall into excess without even remembering -when we passed through satisfaction. If you're interested in losing excess weight, it's important that you develop "small eyes." Using smaller plates, bowls, and silverware is a must. Even small servings look big on these. Consider the difference between serving ice cream in a dainty dessert bowl and eating it with a teaspoon — vs. serving ice cream in a cereal bowl and eating it with a serving spoon! Eat slowly, maybe to relaxing music. Enjoy every bite before you swallow. Don't watch TV or read while you eat —just eat. Prevent "feeding frenzies" by eating meals and planned snacks on time. Eating is a habit, and habits can be changed by Practicing new behaviors over and over. While it may be difficult (impossible?) to change other people's habits, we can always take responsibility for our own. Practice having "small eyes." --*Dr. Stephen R.
